For The Chicken:

  1. In a shallow dish, whisk eggs, garlic, parsley, salt, and pepper. Add chicken, turning to coat evenly. Cover and marinate for at least 15 minutes (overnight for deeper flavor).
  2. When ready to cook, mix bread crumbs, Parmesan, and garlic powder in another shallow dish. Coat the chicken in the breadcrumb mixture.
  3. Preheat oven to 220℃ (430℉). Lightly grease a baking tray or dish with non-stick spray; set aside.
  4. Heat oil in a large skillet over medium-high heat until shimmering. Fry chicken until golden and crispy, about 4-5 minutes per side.
  5. Place chicken on the prepared tray. Top each breast with 80 milliliters of sauce, 2-3 slices of mozzarella, and 2 tablespoons of Parmesan. Sprinkle with basil or parsley.
  6. Bake for 15-20 minutes until cheese is melted and bubbly, and chicken is cooked through.

For The Sauce:

  1. Heat oil in a medium pot. Sauté onion until transparent, about 3 minutes, then add garlic and cook until fragrant, about 30 seconds.
  2. Add tomato puree, salt, pepper, Italian herbs, and sugar (if using). Cover and simmer for about 8 minutes, until slightly thickened. Taste and adjust seasoning as needed.
